      2/3 cup ricotta (6oz)

      1/2 cup grated parmesan, plus extra for garnishing

      1 small shallot

      2 garlic cloves

      Basics: 2 eggs, olive oil, salt, pepper (optional pine nuts for garnishing)

      For the ultimate satisfaction, use your hands to make the dough the old school way. Or use a food processor or stand mixer.

      Make your dough nice and thin, about 1/16-in. When you hold up the dough to the light, you should be able to see the shadow of your hand.

      When forming your ravioli, press out as much air as possible.
